Description

Spiced Coconut Basil Chicken & Rice is a cozy, creamy one-pan meal with tender chicken simmered in a coconut milk sauce infused with garlic, chili flakes, and fresh basil. Served over jasmine or basmati rice, this dish brings warmth, bold flavor, and freshness to the table. It’s quick enough for weeknights, yet elegant enough to impress.


Ingredients

1 ½ pounds chicken breasts or thighs, boneless and skinless

1 tablespoon olive oil

3 garlic cloves, minced

1 teaspoon red pepper flakes (adjust to taste)

1 (13.5 oz) can full-fat coconut milk

½ teaspoon salt

¼ teaspoon black pepper

1 cup fresh basil leaves, chopped (divided)

4 cups cooked jasmine or basmati rice


Instructions

1. Heat olive oil in a large skillet over medium-high heat.

2. Season the chicken with salt and pepper. Sear for 4–5 minutes per side until cooked through and golden. Remove and set aside.

3. In the same pan, reduce heat to medium and add garlic and red pepper flakes. Cook for 30–60 seconds until fragrant.

4. Pour in the coconut milk. Scrape the pan and bring to a simmer for 5 minutes.

5. Return the chicken to the skillet and stir in most of the basil, saving some for garnish. Simmer 2–3 minutes more.

6. Serve chicken over cooked rice, topped with extra basil and red pepper flakes if desired.

Notes

Use full-fat coconut milk for a rich, creamy sauce—light versions will be too thin.

Chicken thighs offer more flavor and juiciness than breasts, though both work well.

Add a squeeze of lime before serving for a fresh, zesty finish.
