Ingredients

1 lb chicken breast or thighs, cubed

2 tablespoons butter (for chicken)

2 cloves garlic, minced

1/3 cup buffalo sauce

8 oz rotini pasta

1 tablespoon butter (for sauce)

1 tablespoon ranch seasoning mix

1 teaspoon Cajun seasoning

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1/4 cup blue cheese crumbles (for garnish)

1/4 cup celery, chopped (for garnish)

Salt and pepper to taste

1 tablespoon olive oil (for cooking chicken)


Instructions

1. Bring a pot of salted water to a boil. Cook rotini pasta according to package instructions until al dente. Drain and set aside.

2. In a skillet over medium-high heat, add olive oil. Sear cubed chicken with salt and pepper until fully cooked and golden. Remove and set aside.

3. In the same skillet, melt butter and add minced garlic. Cook until fragrant (about 1 minute).

4. Stir in buffalo sauce. Return the chicken to the skillet and coat in the buffalo garlic sauce. Let simmer on low.

5. In a saucepan, melt 1 tablespoon butter over medium heat. Stir in ranch seasoning and Cajun seasoning.

6. Pour in heavy cream and bring to a gentle simmer, stirring continuously. Add Parmesan cheese and stir until melted and smooth.

7. Add drained pasta to the Alfredo sauce and mix well.

8. Plate pasta, top with buffalo chicken, and garnish with blue cheese crumbles and celery. Serve hot.

Notes

Use freshly grated Parmesan cheese for the smoothest sauce texture—it melts better than pre-shredded.

To control spice level, start with less buffalo sauce and increase to taste.

Cook pasta just until al dente so it doesn’t get mushy when mixed into the hot sauce.
