Ingredients
2 ribeye or sirloin steaks
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter (divided)
12 oz fettuccine pasta
1 1/2 cups heavy cream
1 cup freshly grated Parmesan cheese
3 cloves garlic (minced)
1 tablespoon chopped parsley (plus more for garnish)
1/2 teaspoon red pepper flakes
Salt and pepper to taste
Instructions
1. Rub the steaks with Cajun seasoning and let rest at room temperature for 15–20 minutes.
2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Sear steaks for 3–4 minutes per side. Let rest before slicing.
3. Cook fettuccine in salted boiling water until al dente. Reserve 1 cup pasta water and drain.
4. In a separate pan, melt 1 tablespoon butter and sauté minced garlic until fragrant.
5. Stir in heavy cream and bring to a simmer. Add Parmesan and whisk until smooth.
6. Adjust sauce thickness with reserved pasta water as needed.
7. Toss in fettuccine, red pepper flakes, and chopped parsley.
