Description

This crispy, spicy chicken sandwich layered with a rich, creamy homemade sauce is the ultimate comfort food indulgence. With golden-fried chicken, a bold marinade, and a savory tangy sauce, it’s perfect for weeknight dinners or weekend cravings.


Ingredients

4 boneless skinless chicken thighs or breasts

1 cup buttermilk

2 tablespoons hot sauce

1 ½ cups all-purpose flour

½ cup cornstarch

2 teaspoons paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper

1 teaspoon salt

½ teaspoon black pepper

Vegetable oil for frying

½ cup mayonnaise

1 tablespoon Dijon mustard

1 clove garlic minced

¼ teaspoon paprika

1 teaspoon hot sauce

4 brioche or sesame burger buns

8 dill pickle slices

1 cup shredded lettuce or greens (optional)


Instructions

1. In a mixing bowl, combine buttermilk and hot sauce. Add chicken thighs or breasts and marinate for at least 1 hour or overnight.

2. In a shallow dish, mix flour, cornstarch, paprika, garlic powder, cayenne, salt, and black pepper.

3. Remove chicken from the marinade. Dredge in flour mixture, dip back in buttermilk briefly, and dredge again in flour mixture.

4. Heat oil in a heavy skillet to 350°F (175°C). Fry chicken 4–6 minutes per side, until golden and cooked through. Drain on a rack and rest for 5 minutes.

5. In a small bowl, whisk together mayo, Dijon, garlic, paprika, and hot sauce. Adjust seasoning to taste.

6. Lightly toast buns. Layer pickles, fried chicken, a spoonful of sauce, and lettuce (if using). Add top bun and serve immediately.

Notes

Let the fried chicken rest on a wire rack for 5 minutes to maintain its crunch.

Double dredging the chicken ensures a crispy, golden crust that holds up to sauce.

For a lighter version, bake or air-fry the chicken instead of deep-frying.
