Spicy Ground Beef Stir-Fry Bowl with Garlic Veggies & Steamy Rice

  • Author: Jam Scott
  • Total Time: 30 minutes
  • Yield: 4 servings

Description

A flavorful, weeknight-friendly stir-fry bowl featuring spicy ground beef simmered in garlic soy sauce, served alongside sautéed vegetables and steamy white rice. Bold, colorful, and perfectly balanced with heat, umami, and crunch.

Ingredients

1 pound ground beef (85% lean)

3 cups cooked white rice

1 medium zucchini, sliced

1 cup mushrooms, sliced

1 red bell pepper, sliced

1 ½ cups broccoli florets

3 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon brown sugar

1 to 2 tablespoons chili garlic sauce or sriracha (adjust to taste)

1 teaspoon sesame oil (optional)

½ teaspoon red pepper flakes (for garnish)

1 tablespoon neutral oil (for stir-frying)

Instructions

1. Wash and prepare all vegetables: slice zucchini, mushrooms, bell pepper, and cut broccoli into florets. Mince the garlic.

2. Cook white rice according to package directions.

3. In a large skillet over medium-high heat, heat 1 tablespoon of oil. Add ground beef, break it up, and cook until browned (6–8 minutes). Drain excess fat.

4. Lower heat to medium and stir in minced garlic, soy sauce, brown sugar, and chili garlic sauce. Simmer for 2–3 minutes to blend flavors.

5. In a separate pan or wok, heat oil over high heat. Add zucchini, mushrooms, bell pepper, and broccoli. Stir-fry for 4–5 minutes until veggies are tender-crisp. Stir in garlic in the final minute. Add sesame oil if using.

6. Assemble the bowls: start with rice, then add beef and veggies. Top with red pepper flakes. Serve hot.

Notes

Don’t overcook the vegetables—they should stay vibrant and crisp for best texture.

Taste and adjust the chili sauce to control the spice level to your preference.

To reheat, add a splash of water or broth to keep things moist and flavorful.
