Whether you’re planning a party, a game night, or just need a quick snack, this easy recipe comes together in minutes. Serve it warm or chilled with tortilla chips, crackers, or fresh veggies for a guaranteed crowd-pleaser.

Ingredients

2 cups corn (roasted or canned, drained)

1 cup cream cheese, softened

½ cup sour cream

1 cup shredded cheddar cheese

½ cup diced jalapeños (adjust for spice level)

½ cup chopped roasted red peppers

¼ cup chopped fresh green onions

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for extra heat)

Salt and black pepper to taste

Instructions

  1. Prepare the Ingredients – Drain canned corn or roast fresh corn in a dry skillet until slightly charred. Dice the jalapeños, roasted red peppers, and green onions.
  2. Mix the Base – In a large mixing bowl, combine softened cream cheese and sour cream. Stir until smooth, then mix in shredded cheddar cheese, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper.
  3. Fold in the Vegetables – Gently stir in the roasted corn, diced jalapeños, roasted red peppers, and green onions until evenly distributed.
  4. Chill or Serve Warm – For a chilled dip, cover and refrigerate for at least 30 minutes. To serve warm, transfer to an oven-safe dish and bake at 350°F (175°C) for 15 minutes.
  5. Garnish and Serve – Sprinkle with extra green onions or shredded cheese. Serve with tortilla chips, crackers, or fresh veggies. Enjoy!
