Description

This hearty and indulgent dinner pairs crispy, juicy steak bites with rotini pasta in a creamy garlic Parmesan sauce. It’s quick enough for a weeknight and satisfying enough for a special meal.


Ingredients

1 lb sirloin steak, cut into bite-sized pieces

10 oz rotini pasta

1 cup heavy cream

3 cloves garlic, minced

1 cup freshly grated Parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

2 tablespoons chopped fresh parsley

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)


Instructions

1. Heat olive oil in a large skillet over medium-high heat. Season steak pieces with salt and pepper, then sear for 2–3 minutes on each side until browned. Remove and set aside.

2. Cook rotini pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.

3. In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.

4. Add heavy cream and bring to a gentle simmer. Stir in Parmesan and let it melt into a smooth sauce. Add reserved pasta water if needed.

5. Toss cooked rotini in the sauce. Season with additional salt, pepper, and optional red pepper flakes.

6. Return steak bites to the skillet and mix gently. Heat through.

7. Garnish with parsley and extra Parmesan if desired. Serve immediately.

Notes

Cut the steak into uniform sizes for even cooking and a perfect sear.

Use freshly grated Parmesan for the smoothest, creamiest sauce.

Add the pasta water gradually to control sauce thickness without thinning flavor.
