Ingredients
1 cup rolled oats
1 cup fresh strawberries, chopped
2 tablespoons cream cheese, softened
1/2 cup Greek yogurt
3/4 cup milk (dairy or non-dairy)
2 tablespoons maple syrup or honey
1/2 teaspoon vanilla extract
1 tablespoon chia seeds (optional)
2 tablespoons crushed graham crackers (optional, for topping)
Instructions
1. Mash the strawberries lightly in a bowl to release juices.
2. In a separate bowl, whisk together cream cheese, Greek yogurt, milk, maple syrup, and vanilla extract until smooth.
3. Add rolled oats, chia seeds (if using), and mashed strawberries to the bowl. Stir well to combine.
4. Spoon the mixture into jars or containers. Cover and refrigerate overnight or at least 4 hours.
5. Before serving, give the oats a stir and top with extra strawberries, a dollop of yogurt or whipped cream, and crushed graham crackers.
