Description

Strawberry Cottage Cheese Ice Cream is a no-churn, protein-packed frozen treat made with just a few wholesome ingredients. Creamy, fruity, and naturally sweetened, it’s a healthier twist on classic strawberry ice cream—ready to scoop straight from your freezer.


Ingredients

2 cups cottage cheese (full-fat, 4% milkfat preferred)

1 ½ cups fresh strawberries, hulled

¼ cup maple syrup or honey

1 teaspoon vanilla extract

1 tablespoon lemon juice (optional)

1 pinch salt


Instructions

1. In a blender or food processor, combine the cottage cheese, maple syrup or honey, vanilla extract, lemon juice (if using), and a pinch of salt.

2. Blend until completely smooth and creamy.

3. Add the strawberries to the mixture. Blend again until smooth or pulse for a chunkier texture.

4. Pour the mixture into a freezer-safe container and smooth the top.

5. Cover and freeze for 4–6 hours or until fully set.

6. Let it sit at room temperature for 5–10 minutes before scooping.

7. Serve in bowls, cones, or as a parfait. Enjoy!

Notes

For the smoothest texture, use full-fat cottage cheese and blend thoroughly.

Add extra strawberries or swirl in strawberry jam before freezing for a fruitier flavor.
