Description

This Strawberry Shortcake Cheesecake blends the best of two desserts: soft vanilla cake layers, a creamy cheesecake center, and a nostalgic strawberry crumble topping. It’s fresh, fruity, and rich without being heavy. Ideal for special occasions or just because you’re craving something sweet and creamy with a fruity twist.


Ingredients

2 prepared vanilla cake layers (from scratch or box mix)

16 oz cream cheese, softened

3/4 cup granulated sugar

2 large eggs

1/4 cup sour cream

1 tsp vanilla extract

1 cup fresh strawberries, chopped

1/4 cup strawberry jam or puree

15 golden Oreos, crushed

2 tbsp strawberry gelatin powder

4 tbsp butter, melted

Optional: whipped topping or frosting for coating


Instructions

1. Prepare and bake vanilla cake layers in two round pans. Cool completely.

2. Make the cheesecake layer by beating cream cheese until smooth. Add sugar, mix, then add eggs one at a time. Mix in sour cream and vanilla. Pour into a springform pan lined with parchment. Bake in a water bath at 325°F for 45-50 minutes. Cool completely and refrigerate.

3. Mix crushed golden Oreos with strawberry gelatin powder and melted butter. Stir until crumbly and chill to set.

4. Place one vanilla cake layer on a plate. Add the chilled cheesecake layer. Top with the second cake layer and press gently.

5. Coat the cake sides with a thin layer of frosting or whipped topping. Press strawberry crumble over top and sides until fully covered.

6. Garnish with fresh strawberries. Chill for 2 hours before slicing.

Notes

Use a hot knife (dip in hot water and wipe dry) for clean slices.

Chill the assembled cake for at least 2 hours before serving for best texture.

For a more vibrant crumble color, add a drop of red gel food coloring to the strawberry gelatin mix.
