Ingredients
1 cup chopped Medjool dates
1 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Instructions
1. Remove pits from Medjool dates and chop them. If dry, soak in warm water for 10 minutes, then pat dry.
2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
3. Add egg and vanilla extract; mix until smooth.
4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
5. Gradually add dry mixture to the wet ingredients until a soft dough forms.
6. Fold in chopped dates gently with a spatula.
7. Scoop dough into balls and place on parchment-lined tray. Chill for at least 30 minutes.
8. Preheat oven to 350°F (175°C). Bake for 10–12 minutes or until edges are golden and centers are set.
9. Let cookies cool on tray for 5 minutes before moving to wire rack.
Notes
Always chill the dough—this prevents over-spreading and improves flavor.
For extra texture, stir in 1/2 cup chopped walnuts or pecans.
Use fresh Medjool dates for best flavor and softness—avoid pre-chopped ones with sugar coating.
