Sweet Pepper Sausage Pasta

Description

A cozy and colorful pasta dish featuring penne, smoky sausage, and tender bell peppers in a rich tomato sauce. It’s an easy weeknight meal with bold flavors and minimal fuss.


Ingredients

12 oz penne pasta

1 lb smoked or Italian sausage, sliced

2 bell peppers (red and yellow), sliced

1 yellow onion, chopped

2 cloves garlic, minced

1 (28 oz) can crushed tomatoes

2 tbsp olive oil

Salt and black pepper, to taste

Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Slice sausage and cook in a skillet with 1 tablespoon olive oil until browned. Remove and set aside.
  2. In the same skillet, add remaining olive oil and sauté onion until translucent.
  3. Add sliced bell peppers and cook for about 5 minutes.
  4. Stir in garlic and cook for 30 seconds.
  5. Pour in crushed tomatoes, season with salt and pepper, and simmer for 10-15 minutes.
  6. Meanwhile, cook penne pasta according to package directions. Reserve 1/4 cup of pasta water.
  7. Combine pasta and sausage with the sauce in the skillet. Add reserved pasta water as needed to loosen the sauce.
  8. Toss well, garnish with fresh parsley, and serve hot.
