A cozy and colorful pasta dish featuring penne, smoky sausage, and tender bell peppers in a rich tomato sauce. It’s an easy weeknight meal with bold flavors and minimal fuss.
Ingredients
12 oz penne pasta
1 lb smoked or Italian sausage, sliced
2 bell peppers (red and yellow), sliced
1 yellow onion, chopped
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes
2 tbsp olive oil
Salt and black pepper, to taste
Fresh parsley, chopped (optional, for garnish)
Instructions
- Slice sausage and cook in a skillet with 1 tablespoon olive oil until browned. Remove and set aside.
- In the same skillet, add remaining olive oil and sauté onion until translucent.
- Add sliced bell peppers and cook for about 5 minutes.
- Stir in garlic and cook for 30 seconds.
- Pour in crushed tomatoes, season with salt and pepper, and simmer for 10-15 minutes.
- Meanwhile, cook penne pasta according to package directions. Reserve 1/4 cup of pasta water.
- Combine pasta and sausage with the sauce in the skillet. Add reserved pasta water as needed to loosen the sauce.
- Toss well, garnish with fresh parsley, and serve hot.
