These crispy Air Fryer Rice Paper Noodle Rolls are a lighter twist on traditional spring rolls—filled with seasoned veggies, noodles, and your protein of choice, then air-fried to golden perfection. They’re fun to make, deeply satisfying, and a total crowd-pleaser.
Ingredients
10 rice paper wrappers
1 cup cooked vermicelli noodles
1/2 cup shredded carrots
1/2 cup thinly sliced bell peppers
2 green onions, chopped
1 cup cooked protein (tofu, shrimp, or ground chicken)
2 tablespoons soy sauce or hoisin sauce
1 teaspoon sesame oil (optional)
Oil spray or brush-on oil for air frying
Instructions
1. Cook your protein with garlic, soy sauce, and a dash of sesame oil. Set aside to cool.
2. Prepare vermicelli noodles according to package directions. Drain and cool.
3. Thinly slice bell peppers and carrots. Chop green onions.
4. Fill a large shallow bowl with warm water. Dip one rice paper wrapper into the water for 5-7 seconds until just soft.
5. Place softened wrapper on a clean surface. Add a small portion of noodles, vegetables, and protein.
6. Fold in the sides, then roll tightly from the bottom like a burrito.
7. Preheat air fryer to 390°F (200°C) for 3-5 minutes.
8. Lightly spray or brush each roll with oil or hoisin sauce.
9. Place seam-side down in air fryer basket without overlapping.
10. Air fry for 8-10 minutes, flipping halfway, until golden and crisp.
11. Serve warm with your favorite dipping sauce.
Notes
Use just-warmed water to soften the rice paper—over-soaking causes tears.
Don’t overfill each wrapper to keep rolling smooth and tight.
Reheat leftovers in the air fryer for 4-5 minutes to revive the crispness.
