Description

Tasty Pineapple Chicken and Rice is a flavorful and colorful dish combining juicy marinated chicken thighs, caramelized pineapple, and tender vegetables over a fluffy bed of white rice. The sweet and savory glaze enhances every bite with tropical flair, making it a perfect choice for weeknight meals or weekend gatherings.


Ingredients

4 boneless, skinless chicken thighs

1 ½ cups pineapple chunks (fresh or canned, drained)

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 garlic cloves, minced

1 teaspoon grated fresh ginger

1 teaspoon chili flakes (optional)

2 tablespoons chopped green onions

1 tablespoon sesame seeds

1 cup diced carrots

2 tablespoons chopped fresh cilantro

2 cups cooked white rice

Salt and pepper to taste

1 tablespoon olive oil (for cooking)


Instructions

  1. Marinate the Chicken: In a bowl, whisk soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and chili flakes. Coat chicken thighs in the marinade, cover, and refrigerate for at least 30 minutes.
  2. Cook the Chicken: Heat olive oil in a skillet. Remove chicken from marinade and sear on both sides (about 4–5 minutes per side) until cooked through. Set aside.
  3. Sauté Vegetables & Pineapple: In the same pan, add carrots and cook for 3–4 minutes. Add pineapple chunks and sauté for another 2 minutes. Pour in the remaining marinade and simmer until thickened.
  4. Glaze & Finish: Return chicken to the pan and spoon the glaze and pineapple over it. Let it simmer for 2–3 more minutes.
  5. Serve: Plate rice, top with chicken and pineapple mixture. Garnish with green onions, cilantro, and sesame seeds.
