Ingredients
4 boneless, skinless chicken thighs
1 ½ cups pineapple chunks (fresh or canned, drained)
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon sesame oil
1 tablespoon rice vinegar
2 garlic cloves, minced
1 teaspoon grated fresh ginger
1 teaspoon chili flakes (optional)
2 tablespoons chopped green onions
1 tablespoon sesame seeds
1 cup diced carrots
2 tablespoons chopped fresh cilantro
2 cups cooked white rice
Salt and pepper to taste
1 tablespoon olive oil (for cooking)
Instructions
- Marinate the Chicken: In a bowl, whisk soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and chili flakes. Coat chicken thighs in the marinade, cover, and refrigerate for at least 30 minutes.
- Cook the Chicken: Heat olive oil in a skillet. Remove chicken from marinade and sear on both sides (about 4–5 minutes per side) until cooked through. Set aside.
- Sauté Vegetables & Pineapple: In the same pan, add carrots and cook for 3–4 minutes. Add pineapple chunks and sauté for another 2 minutes. Pour in the remaining marinade and simmer until thickened.
- Glaze & Finish: Return chicken to the pan and spoon the glaze and pineapple over it. Let it simmer for 2–3 more minutes.
- Serve: Plate rice, top with chicken and pineapple mixture. Garnish with green onions, cilantro, and sesame seeds.
