Description
This Thanksgiving Broccoli Side Dish is an easy, crowd-pleasing vegetable recipe featuring crispy roasted broccoli with a golden parmesan-panko topping. It’s the perfect lighter complement to a rich holiday meal, and it’s flexible enough to prep ahead or serve at room temperature.
Ingredients
5 cups fresh broccoli florets
2 tablespoons olive oil
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
⅓ cup panko breadcrumbs
¼ cup grated parmesan cheese
Optional: 1 teaspoon lemon zest or a pinch of red pepper flakes
Instructions
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
2. Wash and thoroughly dry the broccoli florets.
3. In a large bowl, toss the broccoli with olive oil, garlic powder, salt, and pepper until evenly coated.
4. Spread the broccoli in a single layer on the prepared baking sheet. Roast for 18–22 minutes until the edges are golden and the stems are fork-tender.
5. In a small bowl, mix the panko breadcrumbs with a bit of olive oil and parmesan.
6. Sprinkle the topping over the roasted broccoli and return to the oven for 3–5 more minutes until golden brown.
7. Remove from oven, garnish with lemon zest or red pepper flakes (if using), and serve warm or at room temperature.
Notes
Make sure the broccoli is completely dry before roasting—this helps it crisp instead of steam.
You can roast the broccoli a few hours ahead and reheat it in the oven for 5–8 minutes.
For extra flavor, try adding smoked paprika or swapping parmesan with pecorino.
