Description

These Melted Snowman Peanut Butter Cookies are soft, chewy, and filled with peanut butter goodness. Each cookie sandwich is decorated with a melted snowman made from white chocolate, candy eyes, and festive sprinkles. They’re as fun to make as they are to eat—perfect for winter baking, holiday parties, or a snow day activity with kids.


Ingredients

1 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup brown sugar

1 large egg

1 teaspoon vanilla extract

3/4 teaspoon baking soda

1 cup all-purpose flour

1/4 teaspoon salt

1/2 cup vanilla frosting

12 white chocolate or vanilla melting wafers (or melted white chocolate)

1 tablespoon mini chocolate chips

12 carrot-shaped sprinkles

24 candy eyes


Instructions

1. In a large bowl, cream together peanut butter, granulated sugar, and brown sugar until light and fluffy.

2. Add egg and vanilla extract. Mix well.

3. Stir in flour, baking soda, and salt until a soft dough forms.

4. Cover the bowl and chill dough for 30 minutes to prevent spreading.

5. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.

6. Roll dough into 1-tablespoon balls and place on sheet. Flatten slightly.

7. Bake for 9–11 minutes until lightly golden. Cool completely on a rack.

8. Once cooled, spread vanilla frosting on half the cookies and top with another to create sandwiches.

9. Melt white chocolate or wafers and spoon small puddles on top of each sandwich to mimic melted snow.

10. Immediately press in candy eyes, mini chocolate chips for buttons, and a carrot sprinkle for the nose.

11. Let set at room temperature or chill briefly to harden toppings before serving.
