Ingredients
2 tablespoons unsalted butter
1 small onion, finely diced
2 cloves garlic, minced
1 jalapeño, seeded and finely chopped (optional)
1 tablespoon all-purpose flour
1 cup whole milk
1 cup heavy cream
8 oz cream cheese, cubed and softened
2 cups sharp cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
Chopped fresh cilantro (for garnish)
Extra shredded cheese (for garnish)
Tortilla chips (for serving)
Instructions
- Melt the butter in a saucepan over medium heat. Add onion and cook until translucent (3-4 minutes).
- Stir in garlic and jalapeño; cook for another 1-2 minutes until fragrant.
- Sprinkle flour over the mixture, stir, and cook for 1 minute.
- Slowly add milk and cream, whisking constantly. Simmer for 5 minutes until slightly thickened.
- Lower heat and add cream cheese, stirring until melted.
- Add cheddar and Monterey Jack cheese gradually, stirring until smooth.
- Stir in cumin, smoked paprika, salt, and pepper. Adjust seasoning as needed.
- Transfer to serving bowl, garnish with cilantro and extra cheese, and serve warm.
