Ingredients

3 to 4 ripe bananas, mashed

1/2 cup (1 stick) butter, melted

3/4 cup brown sugar

2 eggs, beaten

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

3/4 cup chopped nuts (walnuts, pecans, etc.)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard loaf pan or line with parchment paper.
  2. In a large bowl, mash bananas. Mix in melted butter, brown sugar, eggs, and vanilla.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Fold dry ingredients into banana mixture until just combined.
  5. Stir in chopped nuts, reserving some for topping if desired.
  6. Pour batter into prepared pan. Smooth the top and sprinkle with reserved nuts.
  7. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
