Description
This viral cowboy butter roasted corn is rich, bold, and packed with flavor from garlic, herbs, lemon, and cayenne. Roasted to perfection and slathered with cowboy butter, this side dish is an absolute cookout favorite you’ll want to make again and again.
Ingredients
6 ears corn on the cob
½ cup unsalted butter
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon Dijon mustard
½ lemon, juiced
⅛ teaspoon cayenne pepper (or to taste)
Salt and black pepper, to taste
Instructions
1. Preheat oven to 425°F (220°C), or preheat your grill to medium-high. Remove husks from corn.
2. Place corn on a parchment-lined baking sheet or grill directly on grates. Roast or grill for 20–25 minutes, turning occasionally until charred and tender.
3. In a saucepan over low heat, melt the butter. Add garlic, parsley, Dijon mustard, lemon juice, cayenne, salt, and pepper. Stir to combine and let simmer for 2–3 minutes.
4. Brush the warm cowboy butter generously over roasted corn, coating every kernel.
5. Serve hot with extra drizzle of cowboy butter and optional garnish of chopped parsley or grated parmesan.
Notes
Make the cowboy butter up to a day in advance and store in the fridge. Reheat gently before using.
For extra flavor, try adding a pinch of smoked paprika or crushed red pepper flakes to the butter.
