Instructions
- Toast the Nuts: Lightly toast the almonds in a dry pan over medium heat for 3–5 minutes, stirring frequently. Alternatively, bake them at 350°F (175°C) for 8–10 minutes. Set aside.
- Make the Caramel: In a heavy saucepan, combine sugar, honey (or molasses), and water. Stir over medium heat until the sugar dissolves. Increase heat slightly and boil until it reaches a deep amber color (about 8–10 minutes) or 300°F (150°C) on a candy thermometer.
- Add Butter and Flavorings: Stir in butter, salt, and vanilla extract carefully, as the mixture may bubble up. Mix until fully combined.
- Incorporate Nuts and Baking Soda: Remove from heat and quickly stir in the toasted almonds. Add baking soda and mix vigorously to aerate the brittle.
