Ingredients

  • 2 cups whole almonds (or a mix of nuts)
  • 1 cup granulated sugar
  • ½ cup honey or dark molasses
  • ¼ cup water
  • 1 tablespoon unsalted butter
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking soda

Instructions

  1. Toast the Nuts: Lightly toast the almonds in a dry pan over medium heat for 3–5 minutes, stirring frequently. Alternatively, bake them at 350°F (175°C) for 8–10 minutes. Set aside.
  2. Make the Caramel: In a heavy saucepan, combine sugar, honey (or molasses), and water. Stir over medium heat until the sugar dissolves. Increase heat slightly and boil until it reaches a deep amber color (about 8–10 minutes) or 300°F (150°C) on a candy thermometer.
  3. Add Butter and Flavorings: Stir in butter, salt, and vanilla extract carefully, as the mixture may bubble up. Mix until fully combined.
  4. Incorporate Nuts and Baking Soda: Remove from heat and quickly stir in the toasted almonds. Add baking soda and mix vigorously to aerate the brittle.
  5. Spread and Cool: Pour the mixture onto a parchment-lined baking sheet. Use a spatula to spread evenly. Allow it to cool at room temperature for at least 30 minutes.
  6. Break into Pieces: Once fully hardened, break the brittle into bite-sized pieces and store in an airtight container.
