These chewy, citrus-kissed no-bake cookies are a breeze to make and packed with refreshing lemon zest and hearty oats. Perfect for summer snacking or a light, guilt-free dessert.
Ingredients
2 cups old-fashioned rolled oats
Zest of 2 lemons
2 tablespoons fresh lemon juice
1/2 cup honey or maple syrup
1/2 cup almond or cashew butter
1/4 cup coconut oil or unsalted butter
1 teaspoon vanilla extract
Pinch of salt
Optional: 1/3 cup shredded coconut or white chocolate chips
Instructions
- Line a baking sheet with parchment paper.
- In a saucepan over low heat, combine nut butter, honey/maple syrup, coconut oil/butter, and vanilla. Stir until melted and smooth.
- Remove from heat and stir in lemon zest, lemon juice, and salt.
- Fold in the oats until fully coated. Add optional mix-ins if desired.
- Drop spoonfuls onto the lined sheet and gently flatten.
- Chill in refrigerator for 30 minutes or until firm.
