Ingredients
2 chicken breasts, boneless and skinless
2 cups gluten-free cornflakes, crushed
2 eggs, beaten
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
Gluten-free cooking spray
Instructions
1. Pat chicken breasts dry and slice into even cutlets.
2. Crush gluten-free cornflakes in a bag or food processor to fine crumbs with some texture.
3. In one bowl, whisk eggs. In another, mix crushed cornflakes with garlic powder, onion powder, paprika, salt, and pepper.
4. Dip each chicken piece into eggs, then press into cornflake mixture to coat completely.
5. Preheat air fryer to 390°F (200°C). Place chicken in a single layer in the basket. Mist with cooking spray.
6. Air fry for 10–12 minutes, flipping halfway, until internal temp reaches 165°F (74°C).
7. Let chicken rest for 2–3 minutes before serving.

For best results, don’t overcrowd the air fryer basket—cook in batches if needed.
Lightly crushing the cornflakes keeps a crunchy texture without becoming powdery.
