Ingredients

1/2 teaspoon dried thyme
1/4 cup all-purpose flour
2 cups milk
1 cup heavy cream
2 cups sharp cheddar cheese, shredded
1/2 cup sour cream
2 tablespoons chopped parsley
1/2 cup extra shredded cheddar, for topping
Instructions
1. Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery, then cook until softened, about 5 to 6 minutes. Stir in the garlic and cook for 30 seconds.
2. Add the diced potatoes, chicken broth, salt, black pepper, and dried thyme. Stir well and bring to a gentle boil.
