Ingredients
12 ounces spaghetti
1 tablespoon olive oil
1 pound ground beef
1 small yellow onion, diced
3 cloves garlic, minced
1 packet taco seasoning, 1 ounce
1 can diced tomatoes, 14.5 ounces
1 can tomato sauce, 8 ounces
1 cup beef broth
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
2 tablespoons fresh cilantro, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup sour cream, optional for serving
2 tablespoons sliced green onions, optional for serving
1/4 cup sliced jalapeños, optional for serving
Instructions
1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and set aside.
2. Heat olive oil in a large deep skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened.
3. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
4. Stir in the garlic and cook for 30 seconds until fragrant.
5. Add the taco seasoning, diced tomatoes, tomato sauce, beef broth, salt, and black pepper. Stir well and simmer for 5 to 7 minutes.
6. Add the cooked spaghetti to the skillet and toss until fully coated in the sauce.
7. Sprinkle the cheddar cheese and Monterey Jack cheese over the top. Cover and let the cheese melt for 1 to 2 minutes.
8. Garnish with chopped cilantro and serve with sour cream, green onions, or jalapeños if desired.
Notes
Cook the spaghetti just to al dente so it does not get too soft after mixing with the sauce.
