Description

Ingredients

6 large eggs

1 cup cottage cheese

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 cup milk

1/3 cup cooked bacon, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1 tablespoon chopped fresh chives or thyme

nonstick spray or butter for the pan


Instructions

1. Preheat the oven to 300°F and grease a 12-cup muffin pan well with nonstick spray or butter.

2. Add the eggs, cottage cheese, milk, salt, black pepper, garlic powder, and onion powder to a blender.

3. Blend until the mixture is completely smooth and slightly frothy.

4. Stir in the cheddar cheese, mozzarella cheese, and chopped cooked bacon.

5. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.

6. Bake for 22 to 28 minutes, until the centers are just set and the tops are lightly golden.

7. Let the egg bites cool in the pan for 5 minutes.

8. Remove from the pan, sprinkle with chopped fresh chives or thyme, and serve warm.

Notes

Blend the egg mixture well for the smoothest and creamiest texture.

Do not overbake or the egg bites can turn rubbery.

Let them rest for a few minutes before removing from the pan so they hold their shape better.
