Ingredients

3 ripe bananas, mashed

1/2 cup unsalted butter, melted

3/4 cup light brown sugar

2 large eggs

1 teaspoon vanilla extract

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup sour cream

3/4 cup Biscoff cookie butter, divided

1 banana, halved lengthwise

1 tablespoon Biscoff spread, warmed


Instructions

1. Preheat the oven to 350°F and grease or line a 9×5-inch loaf pan.

2. Mash the bananas in a bowl and set them aside.

3. In a large bowl, whisk together the melted butter and brown sugar.

4. Add the eggs and vanilla extract, then whisk until smooth.

5. Stir in the mashed bananas and sour cream.

6. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

7. Add the dry ingredients to the wet ingredients and stir just until combined.

8. Pour half of the batter into the loaf pan.

9. Spoon half of the Biscoff spread over the batter and swirl gently with a knife.

10. Add the remaining batter and top with the rest of the Biscoff spread, then swirl again.

11. Place the banana halves on top and drizzle with the warmed Biscoff spread.

12. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out mostly clean.

13. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for the sweetest flavor and softest texture.

Warm the Biscoff spread slightly if it feels too thick to swirl.

Do not overmix the batter or the loaf can turn out heavy instead of tender.
