Ingredients

1 1/4 cups all-purpose flour

1/2 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup hot coffee or hot water

1 cup cherry pie filling

1 tablespoon cherry juice or kirsch

8 ounces cream cheese, softened

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup chocolate shavings

6 maraschino cherries


Instructions

1. Preheat the oven to 350°F and line a 12-cup muffin tin with cupcake liners.

2. Whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt in a large bowl.

3. Add the eggs, milk, oil, and vanilla extract, then mix until smooth.

4. Stir in the hot coffee or hot water until the batter is fully combined.

5. Divide the batter evenly among the cupcake liners and bake for 18 to 22 minutes.

6. Cool the cupcakes completely on a wire rack.

7. Stir the cherry pie filling with cherry juice or kirsch in a small bowl.

8. Cut a small center from each cupcake and spoon in the cherry filling.

9. Beat the cream cheese, powdered sugar, and vanilla until smooth.

10. Whip the heavy cream to stiff peaks in a separate bowl, then fold it into the cream cheese mixture.

11. Pipe or spoon the frosting onto the filled cupcakes.

12. Top with chocolate shavings and maraschino cherries, then chill before serving.

Notes

Use hot coffee instead of water for deeper chocolate flavor.
