Spicy, smoky Cajun-rubbed chicken meets a rich, velvety garlic-mozzarella cream sauce, all tossed with twirl-worthy spaghetti. It’s a weeknight-easy pasta that tastes like your favorite bistro—bold, creamy, and comforting.
Ingredients
2 large chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1 1/2 cups heavy cream
1 cup low-sodium chicken broth
1 1/2 cups shredded mozzarella cheese
12 ounces spaghetti
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley
1/2 lemon, juiced (optional)
Instructions
1. Pat chicken dry and coat with Cajun seasoning.
2. Heat olive oil and 1 tablespoon butter in a large skillet; sear chicken 4–5 minutes per side until cooked through (165°F). Rest.
3. Reduce heat; add remaining butter and garlic. Sauté 30 seconds.
4. Stir in heavy cream and chicken broth; simmer 3–4 minutes to slightly thicken.
5. Whisk in mozzarella until smooth; season with salt and pepper.
6. Boil spaghetti until 1 minute shy of al dente; reserve 1 cup pasta water and drain.
7. Toss spaghetti with sauce, loosening with pasta water as needed.
8. Slice chicken, top pasta, garnish with parsley and lemon juice; serve hot.
Notes
Sear with oil + butter for best browning and flavor.
Undercook pasta slightly so it finishes in the sauce.
Loosen leftover sauce with warm pasta water or broth.
