Ingredients
1 pound shrimp, peeled and deveined
1 tablespoon olive oil
2 tablespoons butter
1 small onion, finely diced
1 small green bell pepper, finely diced
2 celery stalks, finely diced
2 cloves garlic, minced
1 tablespoon Cajun seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
2 tablespoons all-purpose flour
1 cup milk
1/2 cup heavy cream
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 green onions, sliced
1 tablespoon chopped parsley
1 teaspoon hot sauce, optional
1/2 teaspoon salt, or to taste
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 cup buttermilk
1 large egg
4 tablespoons butter, melted
2 tablespoons chopped green onions
Instructions
1. Preheat the oven to 375°F and lightly grease a 9-inch pie dish or small casserole dish.
2. Heat the olive oil and 2 tablespoons butter in a large skillet over medium heat. Add the onion, bell pepper, and celery, and cook until softened. Stir in the garlic and cook briefly.
3. Add the shrimp, Cajun seasoning, smoked paprika, and black pepper. Cook for 2 to 3 minutes until the shrimp just begin to turn pink.
4. Sprinkle the flour over the mixture and stir well for 1 minute. Slowly pour in the milk and heavy cream, stirring until smooth and slightly thickened.
5. Stir in the cheddar cheese, Parmesan cheese, green onions, parsley, hot sauce if using, and salt to taste. Transfer the filling to the prepared baking dish.
6. In a bowl, whisk together the flour, baking powder, salt, and garlic powder for the topping. In another bowl, whisk the buttermilk, egg, and melted butter. Combine the wet and dry ingredients, then fold in the chopped green onions.
7. Spoon the topping over the shrimp filling and gently spread it across the top.
8. Bake for 25 to 30 minutes until the topping is golden brown and the filling is bubbling.
9. Let the pie rest for 10 minutes before serving.
Notes
Use thawed, well-dried shrimp so the filling stays creamy and not watery.
Do not overcook the shrimp in the skillet because they finish cooking in the oven.
Let the pie rest before serving so the filling sets up nicely and scoops cleanly.
