Description

These Chocolate Cherry Cookies are rich, soft, and packed with fudgy chocolate flavor, sweet cherry bursts, and melty chocolate chips in every bite. Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

3/4 cup brown sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups semisweet chocolate chips

1 cup chopped maraschino cherries, well drained and patted dry

1/4 cup extra chocolate chips for topping, optional

1/4 cup extra cherry pieces for topping, optional


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.

3. Add the eggs one at a time, then mix in the vanilla extract.

4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.

5. Add the dry ingredients to the wet ingredients and mix just until combined.

6. Fold in the semisweet chocolate chips and chopped cherries gently.

7. Scoop the dough into 2-tablespoon portions and place them on the prepared baking sheets.

8. Press extra chocolate chips and cherry pieces on top if desired.

9. Bake for 10 to 12 minutes, until the edges are set and the centers are still slightly soft.

10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Pat the cherries very dry so the dough does not get too wet.

Do not overmix the dough after adding the flour or the cookies can turn dense.

For thicker cookies, chill the dough for 20 to 30 minutes before baking.
