Description

These Chocolate Covered Strawberry Cookies are a rich, easy recipe that turns a classic chocolate and strawberry pairing into a soft, bakery-style dessert everyone wants to grab first. Perfect for dessert boards, holiday treats, party food ideas, and sweet snack recipes, these cookies combine fudgy chocolate cookies, silky melted chocolate, and fresh strawberries for one of the best easy dessert ideas to bake at home.

Ingredients

1 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/3 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 tablespoon milk

3/4 cup semisweet chocolate chips

6 medium strawberries, hulled and sliced

1 tablespoon pink sprinkles, optional

Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and creamy.

4. Add the egg and vanilla extract, then mix until smooth.

5. Add the dry ingredients to the wet ingredients and stir until a soft dough forms. Mix in the milk to loosen the dough slightly if needed.

6. Scoop the dough into 10 to 12 portions and place them on the prepared baking sheets, leaving space between each one. Gently flatten the tops.

7. Bake for 9 to 11 minutes, until the edges are set and the centers are still slightly soft.

8. Cool the cookies on the pan for 5 minutes, then transfer to a wire rack.

9. Melt the chocolate chips in short intervals in the microwave, stirring until smooth.

10. Drizzle or spread the melted chocolate over each cookie.

11. Top with sliced strawberries and pink sprinkles if using.

12. Let the chocolate set slightly, then serve.

Notes

Use ripe but firm strawberries so they stay fresh-looking on top of the cookies.

Do not overbake the cookies because they continue to set as they cool.

Add the strawberry topping close to serving time for the best texture and appearance.
