Ingredients

1 1/2 cups chocolate cookie crumbs

5 tablespoons unsalted butter, melted

1 tablespoon granulated sugar

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

4 ounces unsweetened chocolate, melted and slightly cooled

2 teaspoons pure vanilla extract

4 large eggs

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

1/4 cup chocolate shavings or curls


Instructions

1. Preheat the oven to 350°F and grease a 9-inch pie plate if needed.

2. Stir together the chocolate cookie crumbs, melted butter, and 1 tablespoon granulated sugar until evenly combined.

3. Press the crumb mixture firmly into the bottom and up the sides of the pie plate.

4. Bake the crust for 8 to 10 minutes, then let it cool completely.

5. In a large bowl, beat 1 cup softened butter with 1 1/2 cups granulated sugar for 3 to 4 minutes until pale and fluffy.

6. Beat in the melted unsweetened chocolate and 2 teaspoons vanilla extract until smooth.

7. Add the eggs one at a time, beating for 5 minutes after each addition until the filling becomes light and silky.

8. Spoon the filling into the cooled crust and smooth the top.

9. Chill the pie for at least 4 hours, or overnight for the best texture.

10. Before serving, beat the heavy whipping cream with powdered sugar and 1/2 teaspoon vanilla extract until soft peaks form.

11. Spread or pipe the whipped cream over the chilled pie.

12. Finish with chocolate shavings or curls, then slice and serve cold.

Notes

Use fully softened butter so the filling whips up light and smooth.

Beat well after each egg is added because that long mixing time creates the signature silky texture.
