Ingredients

1 cup unsalted butter, melted

1 1/2 cups granulated sugar

1 cup light brown sugar, packed

4 large eggs

2 teaspoons vanilla extract

1 cup unsweetened cocoa powder

1 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon baking powder

1 cup semisweet chocolate chips

16 chocolate sandwich cookies, roughly chopped

6 chocolate sandwich cookies, halved or quartered for topping


Instructions

1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper.

2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.

3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

4. Add the cocoa powder, flour, salt, and baking powder, then fold until just combined.

5. Stir in the semisweet chocolate chips.

6. Gently fold in the chopped chocolate sandwich cookies.

7. Spread the batter evenly into the prepared pan.

8. Press the remaining cookie pieces over the top.

9. Bake for 32 to 38 minutes, until the center is set and a toothpick comes out with moist crumbs.

10. Cool completely before slicing into squares.

Notes

Use room temperature eggs for a smoother batter and better texture.

Do not overbake if you want the brownies to stay fudgy and soft in the center.
