Description

Cowboy Butter Smashed Beef Tortilla Melts are a quick dinner packed with crispy tortillas, savory smashed beef, melty cheese, and bold garlic butter flavor. This easy recipe is perfect for busy weeknights, easy dinner nights, comfort food cravings, and simple food ideas when you want a hearty meal fast.


Ingredients

1 pound ground beef

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon crushed red pepper flakes

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Worcestershire sauce

3 tablespoons unsalted butter, melted

2 cloves garlic, minced

1 tablespoon chopped fresh parsley

1 teaspoon Dijon mustard

1 teaspoon lemon juice

4 large flour tortillas

1 1/2 cups shredded cheddar cheese

1 1/2 cups shredded mozzarella cheese

1 tablespoon oil or butter for the skillet

1 tablespoon chopped parsley for garnish, optional


Instructions

1. In a small bowl, stir together the melted butter, minced garlic, chopped parsley, Dijon mustard, and lemon juice. Set aside.

2. In a medium bowl, combine the ground beef, garlic powder, onion powder, smoked paprika, crushed red pepper flakes, salt, black pepper, and Worcestershire sauce. Mix until just combined.

3. Heat a large skillet or griddle over medium-high heat. Divide the beef mixture into 4 equal portions.

4. Place one portion of beef into the hot skillet and smash it into a thin layer with a spatula. Cook for 2 to 3 minutes until browned, then flip and cook 1 to 2 minutes more. Repeat with the remaining beef.

5. Lay out the tortillas. Sprinkle cheddar and mozzarella over one half of each tortilla. Add one smashed beef portion on top of the cheese.

6. Spoon or brush a little cowboy butter mixture over the beef, then add a little more cheese on top. Fold each tortilla in half.

7. Return the skillet to medium heat and add the oil or butter. Cook each folded tortilla melt for 2 to 3 minutes per side until golden brown and crisp and the cheese is melted.

8. Brush the outside with any remaining cowboy butter, garnish with chopped parsley if desired, slice, and serve hot.

Notes

Use medium-high heat for the beef so it browns well without drying out.

Shred your own cheese for a smoother melt and better texture.

Reheat leftovers in a skillet or air fryer to bring back the crispy tortilla.
