Description

This chilled and creamy crab salad is loaded with crisp celery, tender imitation crab, and hard-boiled eggs tossed in a simple lemon-dill mayo dressing. It’s a quick, no-cook option for picnics, lunches, or party platters that’s full of texture and fresh, savory flavor.


Ingredients

1 lb imitation crab meat, chopped

2 celery stalks, finely diced

3 hard-boiled eggs, chopped

1/2 cup mayonnaise

1 tbsp lemon juice

1 tbsp fresh dill, chopped

1 green onion or 2 tbsp red onion (optional), chopped

Salt & pepper to taste


Instructions

  1. Chop the imitation crab, celery, and boiled eggs.
  2. In a large bowl, combine crab, celery, and eggs.
  3. Add mayonnaise and lemon juice. Mix gently until coated.
  4. Season with salt, pepper, dill, and optional onion. Stir again.
  5. Cover and chill for at least 30 minutes before serving.
  6. Serve cold with crackers, in lettuce cups, or on bread.
