Description

Ingredients

3 1/2 cups all-purpose flour

1 1/2 teaspoons salt

1 teaspoon ground cinnamon

2 tablespoons granulated sugar

2 teaspoons instant yeast

1 1/2 cups warm water

3/4 cup dried cranberries

3/4 cup raisins

3/4 cup chopped walnuts

1 tablespoon honey

1 tablespoon olive oil


Instructions

1. In a large bowl, whisk together the flour, salt, cinnamon, sugar, and instant yeast.

2. Pour in the warm water, honey, and olive oil, then stir until a shaggy sticky dough forms.

3. Fold in the dried cranberries, raisins, and chopped walnuts until evenly distributed.

4. Cover the bowl and let the dough rise for 1 1/2 to 2 hours, or until puffy and increased in size.

5. Turn the dough onto a lightly floured surface and shape it into a round loaf without overworking it.

6. Place the dough on parchment paper, cover, and let it rise again for 30 to 45 minutes while the oven preheats to 425°F.

7. Put a Dutch oven in the oven while it preheats, if using.

8. Carefully transfer the dough into the hot Dutch oven, score the top, cover, and bake for 30 minutes.

9. Remove the lid and bake for 10 to 15 minutes more until the loaf is deep golden brown.

10. Cool completely on a wire rack before slicing and serving.

Notes

Toast the walnuts first for deeper flavor and extra crunch.

Do not add too much extra flour when shaping or the bread can turn dense.

Let the loaf cool fully before slicing so the crumb sets properly and stays airy.
