This Creamy Chicken and Rice recipe is comfort food at its best—juicy chunks of chicken, sautéed with aromatic garlic and onion, then simmered in a luscious cream cheese and heavy cream sauce. Fold in fluffy rice and finish with fresh herbs for a dish the whole family will love.
Ingredients
1 lb chicken breast, cut into bite-sized pieces
1 medium onion, diced
3 cloves garlic, minced
1 teaspoon paprika
4 oz cream cheese
1 cup heavy cream
1 cup chicken broth
3 cups cooked white rice
2 tablespoons olive oil or butter
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
Instructions
1. Heat olive oil or butter in a large skillet over medium heat. Add diced onions and cook until soft, about 3–4 minutes.
2. Stir in minced garlic and sauté for 30 seconds until fragrant.
3. Add chicken pieces to the skillet. Season with salt, pepper, and paprika. Cook for 5–7 minutes or until fully cooked and lightly golden.
4. Reduce heat to low. Add cream cheese and stir until melted into the mixture.
5. Pour in chicken broth and heavy cream. Stir continuously until the sauce becomes smooth and creamy.
6. Fold in the cooked white rice. Mix well to fully coat the rice in the sauce and let simmer for a few minutes.
7. Garnish with fresh parsley and serve warm.
Notes
For extra richness, add a small knob of butter when finishing the sauce.
Want more depth? A splash of white wine can be added before the cream cheese step.
Stirring in some cooked peas or baby spinach at the end adds color and nutrition.
