Description

Creamy Mushroom Garlic Chicken Alfredo with Hot Honey Roasted Potatoes is a cozy, flavor-packed dinner that’s both comforting and exciting. Juicy chicken is simmered in a rich garlic-Parmesan cream sauce, paired with sautéed mushrooms, and served with crispy roasted baby potatoes glazed in hot honey. It’s an easy yet elegant meal you’ll want to make on repeat.


Ingredients

1 lb chicken breasts or thighs, cut into chunks

1.5 lbs baby potatoes, halved

3 cloves fresh garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1.5 cups mushrooms, sliced (baby bella or white button)

2 tablespoons butter (plus more as needed)

2 tablespoons olive oil

2 tablespoons hot honey (for drizzling)

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Preheat oven to 425°F (220°C). Toss halved baby potatoes with 1 tbsp olive oil, salt, pepper, and Italian seasoning. Spread on a baking sheet and roast for 25–30 minutes or until golden and crispy. Drizzle with hot honey while hot.

2. In a skillet over medium heat, melt 1 tbsp butter with 1 tbsp olive oil. Season chicken with salt and pepper, then sear until golden and cooked through. Set aside.

3. In the same skillet, add another tbsp butter if needed. Add sliced mushrooms and sauté until browned. Stir in minced garlic and cook 1–2 minutes until fragrant.

4. Pour in heavy cream. Stir in Parmesan and simmer on low heat until sauce thickens, 4–5 minutes. Season to taste.

5. Return chicken to the sauce and let simmer for 5 more minutes to absorb the flavor. Serve alongside roasted hot honey potatoes and garnish with fresh parsley if desired.

Notes

For the best sear, don’t overcrowd the chicken in the skillet—work in batches if needed.

Use freshly grated Parmesan to help the Alfredo sauce thicken naturally.

Add a splash of cream or milk to loosen the sauce when reheating leftovers.
