Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 small onion, finely chopped
3 cloves garlic, minced
1 cup orzo pasta
2 cups chicken broth
1 cup heavy cream
1 cup freshly grated Parmesan cheese
Salt and pepper, to taste
2 tablespoons chopped fresh parsley
Instructions
- Season chicken with salt and pepper. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken 4–5 minutes on each side until golden and cooked through. Set aside.
- In the same skillet, reduce heat to medium and sauté onion and garlic until fragrant.
- Add orzo and toast for 2 minutes, stirring constantly.
- Pour in chicken broth and simmer until orzo is mostly tender and liquid is reduced, about 8–10 minutes.
- Stir in heavy cream and Parmesan, mixing until smooth and creamy.
- Return chicken to skillet and simmer until heated through.
- Garnish with fresh parsley and serve hot.
