Ingredients
4 large Yukon Gold or Russet potatoes
1 bulb garlic
4 tablespoons unsalted butter
1 cup heavy cream
1 pound breakfast or Italian sausage
2 tablespoons all-purpose flour
2 cups low-sodium beef or chicken broth
1 small onion, finely chopped
1 teaspoon fresh or dried thyme
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F. Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft.
2. Peel and cube the potatoes. Boil in salted water until fork-tender, 15–20 minutes. Drain and return to pot.
3. Squeeze roasted garlic into the potatoes. Add butter and warm cream. Mash until smooth. Season with salt and pepper.
4. In a skillet over medium heat, cook sausage, breaking it into crumbles, until browned. Remove and set aside.
5. In the same pan, sauté chopped onion in sausage drippings until soft. Sprinkle flour and stir to form a roux.
6. Slowly whisk in broth. Simmer 5–7 minutes until thickened. Stir in sausage and thyme. Season to taste.
7. Serve hot mashed potatoes topped with warm sausage gravy. Garnish with thyme or parsley if desired.
