Ingredients

2 tablespoons butter

1 tablespoon olive oil

1 medium yellow onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

28 ounces crushed tomatoes

2 cups vegetable broth or chicken broth

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried basil

1/4 teaspoon dried oregano

1/2 cup heavy cream

2 tablespoons grated Parmesan cheese, optional

Fresh basil leaves, for garnish

Extra cream, for garnish


Instructions

1. Heat the butter and olive oil in a large pot over medium heat. Add the chopped onion and cook for 5 to 6 minutes until softened. Stir in the garlic and cook for 30 seconds.

2. Add the tomato paste and cook for 1 to 2 minutes, stirring often, to deepen the flavor.

3. Pour in the crushed tomatoes and broth. Add the sugar, salt, black pepper, dried basil, and oregano. Stir well and bring to a gentle simmer.

4. Let the soup simmer uncovered for 20 to 25 minutes, stirring occasionally, until the flavors come together.

5. Blend the soup until smooth with an immersion blender, or carefully transfer in batches to a blender and return it to the pot.

6. Lower the heat and stir in the heavy cream and Parmesan cheese, if using. Warm gently for 2 to 3 minutes without boiling.

7. Ladle into bowls and garnish with fresh basil and a swirl of cream before serving.

Notes

For the smoothest texture, blend thoroughly and strain the soup if you want an extra silky finish.

Do not boil the soup after adding the cream, or the texture can become less smooth.

A grilled cheese sandwich or toasted sourdough makes the best classic pairing for serving.
