Description

Crispy Parmesan Roasted Carrots are a quick side dish with tender centers, golden edges, and a savory cheesy finish. This easy recipe is perfect for easy dinner nights, holiday menus, healthy snack ideas, and simple food ideas when you want flavorful vegetables without extra fuss.


Ingredients

1 lb carrots, peeled and cut into sticks

2 tbsp olive oil

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 tbsp fresh parsley, chopped


Instructions

1. Preheat the oven to 425°F and line a baking sheet with parchment paper.

2. Peel the carrots and cut them into evenly sized sticks.

3. Place the carrots in a large bowl and add olive oil, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.

4. Toss until the carrots are evenly coated.

5. Arrange the carrots in a single layer on the prepared baking sheet.

6. Roast for 25 to 30 minutes, flipping halfway through, until tender and golden with crisp edges.

7. Remove from the oven, sprinkle with fresh parsley, and serve warm.

Notes

Cut the carrots into similar sizes so they roast evenly.

Do not overcrowd the pan or the carrots will steam instead of crisp.

For the best texture, serve them right away while the Parmesan coating is still crisp.
