Description

Crock Pot Chicken Parmesan is a cozy, easy dinner packed with tender chicken, rich marinara, and melted cheese. This easy recipe is perfect for a quick dinner, family dinner ideas, easy weeknight meals, and comforting food ideas when you want a hearty slow cooker classic served over pasta.


Ingredients

4 boneless skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 tablespoons olive oil

24 ounces marinara sauce

2 tablespoons tomato paste

2 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes optional

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

12 ounces spaghetti

Extra Parmesan cheese for serving


Instructions

1. Pat the chicken breasts dry and season both sides with salt, black pepper, garlic powder, and Italian seasoning.

2. In a bowl, stir together the marinara sauce, tomato paste, minced garlic, and crushed red pepper flakes.

3. Spoon a little sauce into the bottom of the crock pot, then add the chicken in an even layer.

4. Pour the remaining sauce over the chicken, covering each piece well.

5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken reaches 165°F.

6. Sprinkle mozzarella and Parmesan cheese over the chicken, then cover again for 10 to 15 minutes until melted.

7. Cook the spaghetti according to package directions and drain well.

8. Serve the chicken and sauce over spaghetti, then garnish with parsley and extra Parmesan cheese.

Notes

Use a thick marinara sauce so the finished dish stays rich and not watery.

Do not overcook the chicken or it can become too soft in the sauce.

Cook the pasta just before serving for the best texture and presentation.
