Description

Crockpot Cowboy Beans with Kielbasa is a hearty, easy dinner loaded with smoky sausage, tender beans, peppers, and a rich savory sauce. Ingredients

14 ounces kielbasa, sliced into rounds

2 cans cannellini beans, drained and rinsed

1 small red onion, thinly sliced

1 green bell pepper, diced

1 red bell pepper, diced

1 can diced tomatoes, with juices

2 tablespoons tomato paste

1/3 cup barbecue sauce

2 tablespoons brown sugar

1 tablespoon yellow mustard

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes, optional

1/2 teaspoon salt

1 tablespoon chopped fresh parsley, optional for garnish


Instructions

1. Brown the sliced kielbasa in a skillet over medium heat for 4 to 5 minutes until lightly crisp around the edges.

2. Add the cannellini beans, red onion, green bell pepper, red bell pepper, diced tomatoes, and tomato paste to the crockpot.

3. In a small bowl, whisk together the barbecue sauce, brown sugar, mustard, Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, red pepper flakes, and salt.

4. Pour the sauce into the crockpot and stir in the browned kielbasa until everything is well combined.

5. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 hours.

6. Stir before serving and garnish with parsley if desired.

Notes

Use a smoky barbecue sauce for deeper flavor.

Brown the kielbasa first for the best texture and color.

For a thicker sauce, leave the lid off for the last 20 minutes on high.
