Ingredients
1 large head cauliflower, cut into florets

1 medium yellow onion, diced
3 garlic cloves, minced
1 medium potato, peeled and diced
4 cups vegetable broth
1 cup whole milk
1/2 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 teaspoon smoked paprika
2 tablespoons grated Parmesan cheese
1 tablespoon chopped fresh thyme for garnish
1/4 teaspoon red pepper flakes for garnish
1 tablespoon olive oil for drizzling on top
Instructions
1. Heat the olive oil and butter in a large pot over medium heat.
2. Add the diced onion and cook until soft and translucent, about 4 to 5 minutes.
3. Stir in the minced garlic, dried thyme, and smoked paprika, then cook for 30 seconds.
4. Add the cauliflower florets and diced potato to the pot.
5. Pour in the vegetable broth and season with salt and black pepper.
