An effortless slow-cooked dish that brings bold Asian-inspired flavors to your dinner table with tender chicken, a savory-sweet sauce, and optional veggies. Perfect over rice or noodles and ideal for busy weeknights or make-ahead meals.
Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1/2 cup soy sauce
1/4 cup brown sugar or honey
2 tablespoons rice vinegar
1 tablespoon sesame oil
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons cornstarch
2 tablespoons water
1 cup chopped carrots (optional)
1 cup chopped bell peppers or broccoli (optional)
Sesame seeds and chopped scallions, for garnish
Instructions
- Place chicken in the crockpot.
- In a bowl, whisk together soy sauce, brown sugar or honey, rice vinegar, sesame oil, garlic, and ginger.
- Pour sauce over chicken. Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours.
- Add vegetables during the last hour of cooking if using.
- Mix cornstarch with water to make a slurry. Stir into the crockpot 30 minutes before end of cook time to thicken the sauce.
- Serve over rice or noodles. Top with sesame seeds and scallions.
