Easy Crockpot Asian Inspired Meal

Description

An effortless slow-cooked dish that brings bold Asian-inspired flavors to your dinner table with tender chicken, a savory-sweet sauce, and optional veggies. Perfect over rice or noodles and ideal for busy weeknights or make-ahead meals.


Ingredients

2 lbs boneless, skinless chicken breasts or thighs

1/2 cup soy sauce

1/4 cup brown sugar or honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons cornstarch

2 tablespoons water

1 cup chopped carrots (optional)

1 cup chopped bell peppers or broccoli (optional)

Sesame seeds and chopped scallions, for garnish


Instructions

  1. Place chicken in the crockpot.
  2. In a bowl, whisk together soy sauce, brown sugar or honey, rice vinegar, sesame oil, garlic, and ginger.
  3. Pour sauce over chicken. Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours.
  4. Add vegetables during the last hour of cooking if using.
  5. Mix cornstarch with water to make a slurry. Stir into the crockpot 30 minutes before end of cook time to thicken the sauce.
  6. Serve over rice or noodles. Top with sesame seeds and scallions.
