Description

This Easy High Protein Cottage Cheese Fudge is a rich, creamy chocolate treat that comes together with simple ingredients and almost no effort. Perfect as a healthy snack, easy dessert, high protein treat, quick sweet bite, post workout snack, and smart food idea for busy days, it delivers deep chocolate flavor with a smooth texture you will want to make again and again.


Ingredients

1 cup cottage cheese

1 1/2 cups dark chocolate chips

2 tablespoons unsweetened cocoa powder

2 tablespoons maple syrup

1 teaspoon vanilla extract

1 tablespoon coconut oil

1/8 teaspoon fine sea salt

1 teaspoon flaky sea salt for topping optional


Instructions

1. Line a loaf pan or small square pan with parchment paper.

2. Add the cottage cheese, cocoa powder, maple syrup, vanilla extract, and fine sea salt to a blender or food processor.

3. Blend until the mixture is completely smooth and creamy.

4. Place the dark chocolate chips and coconut oil in a microwave-safe bowl.

5. Microwave in short intervals, stirring often, until fully melted and glossy.

6. Pour the melted chocolate into the blended cottage cheese mixture.

7. Blend again just until fully combined and silky.

8. Transfer the mixture to the prepared pan and smooth the top.

9. Sprinkle with flaky sea salt if using.

10. Chill in the refrigerator for 2 to 3 hours until firm.

11. Lift from the pan, slice into squares, and serve chilled.

Notes

Blend the cottage cheese very well so the fudge turns out silky and smooth.

Use dark chocolate for a firmer texture and a richer chocolate flavor.

Keep the fudge chilled until serving for the cleanest slices.
