Ingredients
2 cups cottage cheese
2 large eggs
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
1 1/2 cups pizza sauce
20 slices pepperoni
2 tablespoons chopped fresh parsley or basil
Instructions
1. Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish.
2. In a medium bowl, mix the cottage cheese, eggs, Italian seasoning, garlic powder, black pepper, 1 cup of mozzarella, and Parmesan until well combined.
3. Spread the cottage cheese mixture evenly into the prepared baking dish.
4. Spoon the pizza sauce over the top and spread it into an even layer.
5. Sprinkle the remaining 1 cup mozzarella over the sauce.
6. Arrange the pepperoni slices evenly on top.
7. Bake for 25 to 30 minutes, until the cheese is melted and bubbly and the pepperoni is lightly crisp.
8. Let the bake rest for 5 to 10 minutes before serving.
9. Garnish with chopped parsley or basil and serve warm.
Notes
For the best texture, use full-fat cottage cheese if you want a richer and creamier bake.
Let the casserole rest before serving so it sets properly and scoops more cleanly.
Add cooked vegetables or cooked sausage only after draining excess moisture so the bake does not become watery.
