Ingredients

2 1/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cinnamon

1/4 teaspoon salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon rum extract, optional

1/2 cup prepared eggnog

1/2 cup unsalted butter, softened for frosting

4 ounces cream cheese, softened

3 cups powdered sugar

2 to 3 tablespoons eggnog for frosting

1/2 teaspoon vanilla extract for frosting

1 pinch ground nutmeg, plus more for garnish


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, nutmeg, cinnamon, and salt.

3. In a large bowl, beat the butter and sugar until light and fluffy.

4. Add the egg, vanilla extract, and rum extract if using, then mix in the eggnog until smooth.

5. Add the dry ingredients to the wet ingredients and mix just until combined.

6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

7. Bake for 10 to 12 minutes, until the edges are set and the tops look dry.

8. Let the cookies cool on the pan for 5 minutes, then transfer to a wire rack and cool completely.

9. For the frosting, beat the butter and cream cheese until smooth.

10. Add the powdered sugar, vanilla extract, and enough eggnog to make a fluffy frosting.

11. Pipe or spread the frosting onto the cooled cookies.

12. Dust with a little nutmeg before serving.

Notes

Do not overbake the cookies or they can lose their soft texture.

Let the cookies cool completely before frosting so the topping stays thick and pretty.

For a stronger holiday flavor, add the optional rum extract and a little extra nutmeg on top.
