Step 1: Boil the Baby Potatoes

  • 0.5 tsp dried parsley
  • 1.5 tbsp olive oil

I start by bringing a pot of salted water to a boil and adding the baby potatoes whole. They cook for about 15-20 minutes until just fork-tender, which keeps them from breaking apart.

While they’re cooking, I combine the remaining seasonings in a small bowl so they’re ready to toss immediately after draining.
